Camping menu

I normally don't share our camping menu, because it's not normally anything spectacular *not that it was this time either.  However, we did branch out a little and did some dutch oven cooking, as well as an open fire cooking.

We have never had to worry with much besides the grill and the stove/oven in the camper - but we decided cooking outdoors was fun, and will definitely be doing more over the fire in the future.

One of our all time camp favorites is chicken kabobs.  I will prep the chicken the week before by chunking it and putting it in Italian Dressing in ziplocks and tossing it in the freezer - pulling it out to thaw the morning we will use it. First couple of years, these were simple - chicken, bell peppers, onion and mushrooms.  We have branched out over the years and recently started adding yellow squash - the  guys fight over that.  This year, the friends we were camping with found a bag of small peppers and we used those as well.  I started off sharing the chicken kabobs, because I think we got more meals out of this one than any other!  We made a huge batch of kabobs, then the leftovers went into - chicken tacos, we added the veggies to our left over pork chops and made chop fajitas, and finally, the leftover veggies became part of omelets.  

Riley learned to make Dutch Over Mountain Man at a camp out some time ago - he has been begging to make that since.  We finally gave in and he made breakfast for us one morning... with help.  It turned out really good!  We have added that to our master meal list! We are going to tweak it a little more for our tastes... but the general idea was yummy! ( The link shows it in foil pans, but we did it in the dutch oven over coals).

I had also seen Onion Bombs on pinterest - and wanted to give them a try.... WOW!  Meatballs are one of our favorite meals anyways, but to put them in the onion peels and throw them in the fire.. they were SO GOOD!  We just used our meatball recipe - that Roger tends to make a little different each time - and basically figured it out from the photos... 

Our final experiment was because we didn't catch enough fish to have a fish fry.  So, we came up with stuff to make chicken potpie in the dutch oven.  It was an experiment for sure, just kind of going on what we knew - no recipe.  It turned out pretty good-just need to adjust the amount of coals that we put on top for the next time - the biscuits were over done...

But we didn't quite achieve that... less coals, or less time, or both?




So, over the next year, we will do some more experimenting in the oven and see if we can come up with some more favorites to add to our camp meals.

  1. I'm so interested in your recipes. We do a lot of RVing and I'm always looking for new ways to cook out doors. My favorite thing to do is to chop up any vegetable into chunks and toss them with olive oil, salt, pepper and whatever spices I have on hand. Then I wrap them in a foil pouch and put them on the grill. Then I cook the meat right along side the pouches.

  2. Oh sounds so delish (even when not camping) and I love that you found so many ways to use those "bits and pieces" to make other nummee meals!

    Sounds like a fun time was had by all and that, at least in my opinion, is even more important than the menu!

  7. Great ideas! I do a lot of RVing and tailgating. There's nothing like camping and cooking! Looking forward to reading more!

  8. I miss Dutch Oven cooking - I used to be a camp counselor and that was always fun. I may have to get one and just do at home, for the fun of it!
